Herring Salad

It is a tradition in our family to eat Heering Salad and Cruller on new years eve . Herring Salad should ensure that you will always have money in your pocket and Cruller will keep you healthy in the new year.
This tradition was very important for my mother in law and she fed us over years with plenty of both which she bought. Later I began to prepare the salad and the cruller myself. Both fresh made is much more delicious than ready made bought.

Today I will give you the recipe for the Herring Salad and I wish you a Happy New Year with plenty of money in your purse.
By the way: Of course you can eat this salad through the whole year as well.

Ingredients   (4 persons)

1 beetroot
salt
4 big potatoes
8 herring fillets
1 onion
2 pickeld cucumbers
2 apples
200 g boiled beef (or pork)
¼ l sour cream or mayonnaise
2 tbsp vinegar
sugar
pepper

2 boiled eggs for decoration

Boil the beetroot (with the skin) in slightly salty water for 1 hour. Meanwhile boil the potatoes (also with the skin). Peel both and let them cool down.
Cut the herring fillets in slice nearly as thick as a finger. Peel the onion and slice it in rings. Cut the cucumbers, the meat, the beetroot, the potaoes and the apples in little cubes. Mix all ingredients with the mayonnaise. Season the salad with vinegar, salt, sugar and pepper. Split each egg in 8 slices and decorate them on the salad.
