Galettes are typical french pancakes made from buckwheat flour. The name Galette is also used for large, round and flat cakes from other flours. My Galettes are made with spelt flour and lots of seasonal fruits. This is a perfect summer cake.
I have a little apple tree in my garden with aromatic apples in a wonderful red colour. This sort of apple is called “Augustapfel”. Ups, this year the apples are already mellow in July. There are lots of apples on the tree, last year I had only 3 apples. My August apple is perfect for baking. I picked the first apples and now the phantastic smell of the apples is around the whole house. That inspired me to bake an apple cake. Yesterday I was at the farmers market where you can get everything that you could possibly need for baking fruit cakes. It’s the best time in the year. I found lot’s of berries and mixed them with my apples.
Short Pastry
200 g spelt flour
1 tablespoon icing sugar
1 pinch of salt
100 g cold butter
70 ml iced water
Topping
500 g fresh fruits
4 tablespoons sugar
vanilla
4 teaspoons cornstarch
1 egg
1 tablespoon milk
1 tablespoon sugar
Put the water in the freezer to cool it down.
Mix flour, icing sugar and salt. Add the butter as little cubes and mix everything with your fingers. Don’t treat the dough too long that makes it chewy. Add the cold water. Wrap the dough into cling wrap and let it cool down in the fridge for 1-2 hours.
If necessary chop the fruits and mix them with sugar, vanilla and cornstarch.
Preheat the oven to 180°C.
Divide the dough in 2 pieces, roll them out and put them side by side on a baking paper.

Spread the fruits on the dough but leave some space to the borders. Pleat the dough over the berries and put the baking paper on a baking tray. Put the baking tray for 10 minutes into the freezer. This is an important step to get a crispy cake. Mix egg and milk and coat the dough with this mixture.Spread some sugar on top and bake the galettes for 35-45 minutes till the dough gets brown and the fruitjuice is bubbeling.
Serve the galettes with a ball of vanilla icecream and have a nice teatime outside at any nice place in your garden or on the balcony. Enjoy it!
