Cruller or Neujahrskrapfen

It is a tradition in our family to eat Neujahrskrapfen (transl. Cruller) and Heering Salad on new years eve. Herring Salad should ensure that you will always have money in your pocket and Cruller will keep you healthy in the new year.

This tradition was very important for my mother in law and she fed us over years with plenty of both which she bought. Later I began to prepare the salad and the cruller myself. Both fresh made is much more delicious than ready made bought.

I posted already the recipe for Herrings Salad and now comes the recipe for the Neukrapfen:

Ingredients
500 g flour
25 g fresh yeast
¼ l lukewarm milk

½ teaspoon salt
75 g sugar
1 teaspoon ground cardamon
75 g flakes of butter

Palm oil for frying

Melt the yeast in the lukewarm milk. Mix together all ingredients and knead them to a smooth dough. Put the dough into a bowl and cover it with a lid or a teatowel. Let the dough rest for 1 hour.

Spread the dough and cut the cruller with a glass.Heat up the palm oil in a pan and fry the cruller from both sides till they are brown. Then roll them in sugar.

The Neujahrskrapfen are delicious when they are still a little bit warm.
